After suffering various symptoms for many years, medical tests determined that I had multiple food intolerances. Once I began to eat gluten-free, my life changed; I finally had the energy to get up in the morning, the desire to improve my health, and the mental capacity to do it all. Food was the biggest uphill battle. Living gluten-free meant giving up most of my favourite foods, including some traditional Bosnian foods I grew up eating.
However, once my daughter discovered that she had the same intolerances as I did, it drove me to start being creative and courageous with my food creations, especially desserts. Years in the making, and finally tweaked to its finest, the cashew cheesecake has become a staple in our home. We are now excited to share it with the world and for those who suffer from many of the same food intolerances that can sometimes feel like a barrier to enjoying food again.
